Mung Sprout Salad



Ingredients:

- Whole Mung(Green gram) soaked for 24-48hrs
-Romano Tomatoes diced
-Cucumber diced
-Onion chopped
-Croutons
-Cilantro 4-5 strands chopped
-Orange pieces
-Chopped green chilies (Optional)

Dressing:
-Olive oil 2 Tsp
-Salt
-Pepper 1/2 tsp
-Vinegar 3 Tbsp
-Lemon juice 2tbsp
-Chat masala powder
-Lemon zest 1/4 tsp

Directions:
- Add all the dressing ingredients and whisk together.
-Wash the soaked sprouts well with water before adding it to the salad.
-Add sprouts and all other vegetables to the dressing and toss it well.
-Add the croutons just before serving.
- Can add ranch also if you wish to. (Optional)

Bitter gourd chutney powder




Ingredients:
-Bitter gourd 1
-coconut powder 1/4 cup
-black pepper
-tamarind(small pieces)
-jeera/cumin 1tsp
-mustard 1/2tsp
-Hing powder 1/4tsp
-oil
-salt

Directions:
-Heat oil in a non-stick pan
-add mustard,cumin seeds,and hing,black pepper
-when mustard splutter add tamarind pieces ,chopped bitter gourd and salt
-fry this this well till all the water from bitter gourd is gone and it become crispy
-now add dry coconut grates into it.
-Allow it to cool and then grind the mixture to make in to coarse powder.
-Can add 1/2 tsp of sugar if u desire

It is healthy and tasty with rice,dosa.

Chocolate-Banana Fudge



Ingredients:
- 1 can sweetened condensed milk
-2 cups bitter sweet chocolate chips
-1 ripened banana,mashed
-3 Tbsp unsalted butter
-Butter to grease the pan
-Salt optional
-Vanilla extract

Directions:

-Mix condensed milk, butter,chocolate chips in a pan
-Heat the pan (preferably nonstick) in low flame
-when the chocolates melt add pureed banana
-cook it till the mixture leaves the sides of the pan
-add vanilla extract at the end
-pour the mixture in to a baking pan and refrigerate it for 2hrs until it becomes firm
-Cut them into squares and store it in the refrigerator again in an airtight container.

Note:I have added walnuts too with this to give crunchiness to the fudge.

Black eyed peas and Garlic soup with Herbs and Garlic facaccia



Ingredients:

Soaked Black eyed peas and green peas (mixed) -1 cup
Onion/shallots -Half
Garlic- 2 pods
Italian herbs 1tsp
Olive oil- 2 Tsp
Butter- 1tbsp
Half and Half 1/2 cup
Salt
Pepper - 1 tsp

Directions:

-Pressure cook soaked Black eyed peas with salt
-Heat olive oil and butter in a pot and add onion/shallots and Italian dried herbs to it.
-when onions/shallots are fried a bit add sliced garlic to it.
-then add cooked black eyed peas to it and bring it to boil.
-when it cools down take half of this mixture and blend it in a blender into fine paste.
-add this fine paste into the remaining peas and bring it to boil with medium heat.
-add half and half and pepper powder while boiling.
-Add salt at the end before serving.
Serve it with grilled ciabatta bread or Herbs and Garlic focaccia
